I’m mildly obsessed with catching a coconut. Today while motoring back to the boat I found a free range coconut just floating around in the water and Jason grudgingly grabbed it for me. We have nothing else to do today really, so we cut it open as a science experiment. I apparently have no problems eating food I find floating in the water, but Jason was a little more hesitant and didn’t think it would be good to eat. Hopefully next time we can just snag one from under a tree!
So… now what do I do with it? I don’t really like raw coconut meat in large quantities… but then I remembered Ian gave me his recipe for coconut cream! So… lets do that. Essentially, you just put the coconut into a blender with some water and crush it into a pulp. Then you drain the liquid out through some cheesecloth and end up with cream and coconut flour! Since Caroline was so nice to give us bags of big shrimp, I’m going to trade those for some fresh coconut flour that she uses to bake. Winning!
Jason hasn’t made me anything with the coconut milk yet, but I’m hoping it makes its way into some sweet bread! 🙂
Also… I can’t have nice things so I made the cats a coconut helmet that they weren’t impressed with…
So yeah… first coconut down! I feel like I’ll be doing this a lot since I really like coconut rice and other stuff and fresh coconut is delicious!
