In my last post, Jason and I were pondering whether to stay on the coast and dodge the rain or whether to head inland to the desert where the weather was nicer.  As you may have guessed by the title of this post, we chose to go to the desert.  Jason and I love Bend.  The vibe is super cool and the mountain biking is epic.  We even found a hotel right in downtown that would let us bring our bicycles up into the room with us. Score! We will be coming back here for sure!

The mountain biking is awesome as usual, however we also come to Bend for the FOOD! Our long-standing favorite spot is Noi Thai.  They have what we affectionately call “crack chicken”.  Technically it’s the crispy garlic chicken. We can’t even take credit for calling it crack chicken, that’s what the staff calls it also…They also have a great thai tea.

This time around we hung around the local bike shop long enough for them to start giving us food recommendations.  Either because we’d been looking at stuff for so long they wanted us to leave or because we’d been there so long we were finally hungry.  We were sent to a restaurant called Spork.  It started as a food truck peddling street food recreated from recipes all over the world and evolved into probably the most diverse and interesting restaurant I’ve ever been to! I had the Lomo Saltado, a Peruvian stir fry.  They have a huge menu of unique drinks if you’re into that sort of thing. I had a mint limeade.  I’m going to have to try and make that at home, because it was amazing! Spork is definitely going to give Noi a run for its money!
